BREAKFAST: Plantain Porridge

Serves: 3 persons

Breakfast



Recipe

1 Green plantain

1/2 Cup Oat

1 Green banana

1ml Cinnamon

1ml Nutmeg

1.2ml Vanilla

11/2 Cup Water

1/3 Cup Sugar (dark or white) or sweet condensed milk (Optional)

1 Pinch of salt

1/2 Cup bag milk or coconut milk

3-4 Bay Leave


*****if you are sugar free just remove the sugar/ sweet condensed milk***


Instructions:

1. Add 11/2 cup of water in the pot and put on the stove to boil.

2. Peel, wash and slice green plantain and banana into 3cm slices.

3. Put the plantain, banana, oat and water in a blender and pulse until chopped fine, then puree for smooth.

4. Add vanilla and puree for 30 seconds.

5. Add nutmeg, cinnamon, bay leaves, bag milk/coconut milk and stir

6. Add the blended mixture into the pot and constantly stir for 10 minutes to avoid lump

7. Add salt and stir

8. After about 20 minutes of cooking time, turn off heat, add sugar/condensed milk to taste.

9. Dish out and enjoy!
